Cool White Bean Dip

Ingredients

  • 1 cup cooked white beans

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1/4 cup chopped fresh parsley


Directions

Put all ingredients in blender or mini-food processor and puree. Voila! You have a homemade bean dip for fresh vegetables or pita chips. Chill or serve immediately.


Serves 4

Each serving contains about 95 calories, 4 g protein, 1 g fat, 0 mg cholesterol, 12 g carbohydrates, 5 g fiber, and 3 mg sodium.
